There are sixteen Pappas Bar-B-Q locations, all in Texas — fourteen in the greater Houston area including Humble, Pasadena and The Woodlands, and two in the Dallas–Fort Worth area at Northwest Highway and Duncanville. The original store, opened in 1967 as the Brisket House, still trades at 1217 Pierce Street in downtown Houston. Every location is company-owned; Pappas does not franchise. Menus are identical across the chain but prices are not — downtown and NRG Stadium sit at the top of each band and suburban freeway stores at the bottom, a spread of one to two dollars on a brisket plate.

Choosing between them
The menu is the same everywhere. Three things are not.
- Price band. Downtown Pierce Street and NRG Stadium consistently price at the top of each band; suburban freeway stores price at the bottom. If you're comparing what you paid against the figures on this site and they don't match, this is usually why.
- Breakfast. Only a subset of Houston stores run it, and only until 10 a.m. Call first — see the breakfast page.
- Event-day traffic. The NRG Stadium location is genuinely difficult on match and concert days. If you want brisket on a Texans Sunday, drive to Monroe or I-45 at Woodridge instead.
Beyond Bar-B-Q, Pappas Restaurants runs more than ninety restaurants across eight states — Pappadeaux Seafood Kitchen, Pappasito's Cantina, Pappas Bros. Steakhouse, Pappas Seafood House, Pappas Burger, Yia Yia Mary's and Dot Coffee Shop among them. Several share car parks with a Bar-B-Q location, which is worth knowing if half your group doesn't want barbecue.

Which locations serve breakfast?
Breakfast runs at a subset of Houston stores only, Monday to Friday 6:30–10 a.m. and Saturday 7–10 a.m. It is not offered at every location and is not offered at the Dallas-area stores. Phone the specific store before driving out for it.
Can I order catering from any location?
Value packs, party trays and bulk to-go are available from all locations, but trays and bulk orders require 24 hours' notice and are pickup only. Phone the store directly rather than ordering online for anything above a value pack.
