The four sections nobody reads until they need them

Pecan pie and pralines at the register, gallon tea that quietly solves catering drinks, a kids' menu that starts at $4.25, and a breakfast service most people don't know exists. These are the cheapest items on the Pappas board and a few of them are the most useful.

Pappas Bar-B-Q desserts cost $2.25 to $6.95. Cheesecake and carrot cake are $6.95, pecan pie $5.95, chocolate cake and parfaits $3.95, dessert bars $3.45, brownies $2.95 and pralines $2.25 — the cheapest item on the whole menu. Drinks are $2.75 to $2.85 by the cup, with iced tea at $7.95 a gallon and lemonade $9.95 a gallon for catering. The kids' menu runs $4.25 to $7.75 for ages 12 and under, and every kids' item includes a drink. Which one

The case splits at four dollars. Above it sit the three proper desserts — cheesecake, carrot cake and pecan pie — and below it sit the grab-and-go items.

Pecan pie is the one to order if you're only ordering one. It's the regional answer, it survives the drive home better than cheesecake, and at $5.95 it's a dollar under the two cakes.

Pralines at $2.25 are the smartest add-on on the entire menu. They keep for days, they cost less than a soft drink, and a handful of them turns a to-go order into something you can hand round.

If you are ordering for a group, ask about whole pies and cheesecakes. Most locations will do them with notice and it is substantially cheaper than buying eight slices.

Drinks

Fountain drinks and tea are refillable in-store at most locations. The gallons are the catering play.

Catering

Drinks are where group orders leak money. Twelve fountain drinks at $2.85 is $34.20. Two gallons of iced tea is $15.90 and pours more. If you are collecting a value pack, add the gallons at the same time.

Monday–Friday 6:30–10 a.m., Saturday 7–10 a.m., at participating Houston locations only.

Homemade breakfast

Add refried beans or skillet potatoes to any taco for 39¢. Add coffee and a hash brown for $1.00.

Select stores

The item that justifies the trip is the brisket, egg and cheese taco at $3.65. It uses the same brisket that costs $16.95 on a plate at lunch, folded into a flour tortilla before seven in the morning. There are not many places in Houston selling pit brisket at breakfast prices.

Two practical warnings. First, breakfast is genuinely not available at every Pappas Bar-B-Q — it runs at a subset of Houston stores and is easy to drive to and miss. Call the specific location. Second, service stops at 10 a.m. sharp; the line switches over to the lunch board and the tacos are gone.
