Why we'd steer you away from the drive-thru
This is a cafeteria line where the meat is cut and weighed in front of you. For a routine sausage plate on the way home the drive-thru is fine. For the trip where you actually want good brisket, park and queue.

The best time of day to go
This is where knowing the pit process pays off. Pappas loads its brisket pits three times a day and rests the meat seven to eight hours before service, so the pit schedule and the service schedule are deliberately offset. Everything is cooked fresh daily rather than held over, which means supply is genuinely finite rather than topped up from a warmer.
6:30–10 a.m. — breakfast, Houston stores
Quiet, cheap, and the only time you can buy pit brisket for $3.65. Ends at ten sharp.
11 a.m. – 1 p.m. — the best meat, the worst queue
Brisket has finished resting on schedule and the full range is available. Also when every office within two freeway exits arrives. If you want the best brisket, come at 11.
2–4 p.m. — the sweet spot
Queue has gone, meat is still good, carvers have time to talk to you. This is when to go if you want to ask for a particular cut.
5–7 p.m. — fine, but ask first
Beef ribs and baby backs start disappearing. Brisket is still fine. Sausage and ham are unaffected — they hold better than anything else on the board.
After 7 p.m. — call before you drive
