How much Bar-B-Q do you actually need?

The single most common ordering mistake is guessing, and it goes wrong in both directions — a hundred dollars of leftovers, or running out at the halfway point. The rule is a third to half a pound of cooked meat per adult when there are sides. The method behind the numbers

Portion planning for barbecue is not guesswork, but it is not precise either — it is a small set of conventions that caterers have converged on because they work. Here is exactly what this calculator does, so you can override it where your situation differs.

Step 1 — the base rate

A third of a pound of cooked meat per adult is the floor when there are two or more sides on the table; half a pound is the ceiling when meat is effectively the whole meal. The default here is 0.4 lb, which is the middle and the figure that goes wrong least often. Children under twelve get half an adult portion.

Step 2 — cooked weight, not raw

Everything on this page is cooked weight, because that is what Pappas sells. This matters if you are comparing against home-smoking guides, which quote raw weight and then apply a 40–50% cook loss. A brisket that yields 5 lb of sliced meat started life around 10 lb. When you buy at the Pappas counter, that loss has already happened and you are not paying for it — which is the honest counter-argument to the $22.95 whole untrimmed brisket.

Step 3 — sides at two servings per adult

Two side servings per adult is the convention, and it happens to match exactly what a Pappas plate includes. Step 5 — drinks, the quiet cost

Past eight people the tool switches its drinks recommendation from cups to gallons. Twelve fountain drinks at $2.85 is $34.20; two gallons of iced tea at $7.95 is $15.90 and pours around thirty-two servings. It is the least glamorous saving on this website and one of the largest.

Meat cost is the raw counter cost of the meat only, at a blended $7.00/lb. It excludes sides, bread and drinks — which is exactly why the packs look better than they first appear.

Portion questions

How much barbecue do I need per person?

Plan on ⅓ to ½ pound of cooked meat per adult when you are also serving sides and bread, and about ¼ pound per child under twelve. Go to the top of that range — or above it — if barbecue is the only thing on the table, if the group skews male and hungry, or if you want leftovers. Drop to the bottom of it if you are serving three or more sides, or if the meal follows a heavy starter.

How many pounds of brisket for 20 people?

For twenty adults with sides, order 7 to 10 pounds of cooked brisket — ⅓ lb each is 6.7 lb, ½ lb each is 10 lb. In practice, mixing meats is both cheaper and better received: 4 lb brisket, 3 lb sausage and a whole chicken lands near $60 and gives people a choice.
